Pineapple Chicken

Pineapple Chicken with Pineapple Chutney

Ingredients

    • Boneless chicken thighs or breasts (~1lb total weight)
    • 2 tbsp soy sauce (regular or low sodium)
    • 2-3 scallions – diced
    • 1 tsp ginger paste
    • 1 tsp cayenne pepper (optional)
    • Salt to taste
    • 2 tbsp oil

Directions

    2. Trim any excess fat from the thighs (or breast) pieces.
    3. Coat evenly the marinade from step 1 on the chicken and let it marinate in the fridge for 20-30 minutes.
    4. Pre-heat the grill and drain the chicken pieces, reserving the marinade for basting.
    5. Grill the chicken pieces – turning and basting every 5-6 minutes.
    6. Grill for 10-15 minutes, until fully cooked or a meat thermometer reads 165’F when inserted into the thickest part of the chicken.
    7. Remove and serve immediately with a side salad. Enjoy!
