Ingredients
- • Boneless chicken thighs or breasts (~1lb total weight)
- • 2 tbsp soy sauce (regular or low sodium)
- • 2-3 scallions – diced
- • 1 tsp ginger paste
- • 1 tsp cayenne pepper (optional)
- • Salt to taste
- • 2 tbsp oil
- • 2 tbsp Souvei Pineapple Chutney
Directions
- 1. In a bowl, mix the ginger,soy sauce, cayenne powder and Souvei Pineapple Chutney.
- 2. Trim any excess fat from the thighs (or breast) pieces.
- 3. Coat evenly the marinade from step 1 on the chicken and let it marinate in the fridge for 20-30 minutes.
- 4. Pre-heat the grill and drain the chicken pieces, reserving the marinade for basting.
- 5. Grill the chicken pieces – turning and basting every 5-6 minutes.
- 6. Grill for 10-15 minutes, until fully cooked or a meat thermometer reads 165’F when inserted into the thickest part of the chicken.
- 7. Remove and serve immediately with a side salad. Enjoy!
