Ingredients

    • 2 boneless pork tenderloin chops (0.75 – 1lb total weight)
    • 1 tbsp butter or vegetable oil for marinade
    • 1 tbsp butter or vegetable oil for cooking
    • 1/4 cup diced onions
    • 1/2 tsp cayenne powder
    • 1 tsp ginger paste
    • 1 tsp thyme
    • 1 tbsp sherry wine vinegar
    • Salt and pepper to taste

Directions

    1. In a bowl, mix the garlic, thyme, butter (or oil), cayenne powder, pepper and salt. Coat the pork tenderloins evenly and let it marinate in the fridge for 15-20 minutes.

    3. Add the onions and stir frequently. Once they turn brown, in 2-3 minutes, add the pork tenderloins.
    4. Roast on the pan on one side for 60 seconds. Flip the pieces and roast the other side for another 60 seconds
    5. Lower the heat to medium low, place a lid on the pan and cook for 4-5 minutes.
    6. Remove the lid and flip the pork pieces.
    8. Place the lid over the pan and let the pork cook for another 1-2 minutes or until the pork is fully cooked.
    9. Serve immediately with a side salad of your choice or grilled garlic bread or mashed potatoes on the side. Enjoy!
